Directions

- Spice the chicken breast and grill hot & fast
- Grill the jalapeno peppers 
- Slice & dice the chicken & 3 peppers
- Shread 1 cup of cheese

- Cut a X shape in both side of the peameal roast
- Stuff the chicken, pepper and cheese into the middle X in roast
- Slide it on to a rotisserie and cook indirect for 30 - 40 min
- Add a little smoke you like

- Make a bacon weave with 1 1/2 packs of sliced bacon
- Cut & squeeze the sasuge from the casings on to the weave
- Add diced red onions and 1 grilled & diced jalapeno pepper

- Wrap the stuffed roast in the bacon & sasuage weave
- Pin the side bacon with tooth picks
- Put it back on the rotisserie and cook indirect 45 - 65 min
- Add any BBQ sauce to the outside 
- Cook for 10 - 15 min so the sauce gets thick & sticky

- All Done
- Take it off the rotisserie and pull out the tooth picks
- Slice and serve

1 - Peameal or Canadain Bacon roast
2 - Packs sliced bacon
2 - Boneless skinless chicken breast
4 - Jalapeno peppers
4 - Sausages
1 - Red onion
1 - Cup of cheese
Salt - Pepper - Rubs and sauce you love to taste.
